Maturity degree of four Okra fruits varieties and their nutrients composition

Selected nutrients concentration of okra was evaluated during fruit growth in a three replicated experiment. Okra fruits aged 3, 5, 7, 9 and 11 days were harvested in experimental plots and analyzed in the laboratory for protein, sugar, lipid, phosphorus, calcium, potassium and iron content. It was found that lipids concentration of the fruit increases with age. Sugar and protein concentrations are highest in 5 to 9 days-old fruits. Nutrient contents also vary according to okra cultivar. Indiana, an improved okra variety has the highest levels of phosphorus (13.67 mg/100g DW at 7-days maturity stage) whereas cultivars GB8/04B have the highest calcium levels at 3-days (217.20 mg/100g DW) and the most important rate of iron (1.46 mg/100g DM at 5 days). This study revealed that potassium is abundant in okra. In addition, 7-days old okra fruits have the highest concentration of nutrients
